Plan Check Kitchen + Bar’s Matthew Biancanello, one of LA’s leading cocktail chefs, is known for his work in developing culinary cocktails with market driven and foraged ingredients like arugula, strawberries, and passion fruit.

This year, he is celebrating the Year of the Horse by introducing his new Breeder’s Cup cocktail, featuring beet-infused horseradish with Tito’s vodka, lime juice, Monin’s agave syrup, cucumber slices, and a pinch of applewood smoked salt.

Ingredients
2 oz Tito’s Vodka
3/4 oz fresh lime juice
3/4 oz agave syrup (1:1 ratio of water to agave)
3 cucumber slices (1/8 inch thick)
1 bar spoon beet horseradish
pinch of smoked salt on top

Procedure
Muddle everything except vodka and salt. Then add vodka and ice and shake and strain into a rocks glass with ice. Add the salt on top and serve.

This cocktail is recommended as a good substitute to a Bloody Mary, with oyster or shrimp pairings.
