As a kid in school, what day was the most looked forward to day of the week? Friday of course. Not just because it meant the arrival of the weekend, but because Friday also marked the best lunch day of the week. You know what I’m talking about – Pizza Friday.

I remember when I was in the third grade, my class and I would all eat our pizza lunch together in the classroom, then head out to recess and play Teenage Mutant Ninja Turtles in the grass until the final bell rang. Now, no one’s fighting over who’s going to be Donatello today, but the sentiment, I’m sure is the same.

Pizza is the official food of the sleepover, sports night at home, and paint parties everywhere. It’s the perfect way to show your appreciation for friends who help you move. It is the easy out the whole family will love on those nights when work demands a few extra hours of your time.

Want to get the little ones to help you make dinner? Tell them tonight is pizza night and watch their faces light up. Sprinkling flour, rolling dough, shredding cheese, and topping the pie with whatever your heart’s desire. That kind of culinary fun sounds good to children and adults alike.

And today, the possibilities are endless. Extra pepperoni is good, but spinach, chicken, and mushroom with white sauce is even better. Olives, sausage, jalapeños, even bacon. Maybe not all together, but with the right combinations, you can create the perfect pizza pie for any occasion.

Chicken Caesar Salad Pizza

Ingredients:

1. Ready to bake pizza dough
2. 3 tbsp all purpose flour
3. Olive oil for drizzling
4. 4 large leaves romaine lettuce (washed, pat dry, and shredded)
5. 2 grilled chicken breasts (sliced into strips)
6. ½ – 2/3 cup fresh shredded parmesan cheese
7. Your favorite creamy Caesar Salad Dressing

Instructions:

Preheat your oven to 400 degrees. Dust a clean flat surface with flour and roll out your pizza dough. You want to be sure to coat your dough with a little flour so it doesn’t stick to the rolling pin. Place on a lined cookie sheet or pizza stone, drizzle with a little olive oil, and bake for 8-10 minutes.

Remove from heat and let cool. Once cooled, spread Caesar dressing on the dough, then pile your pie high with shredded lettuce, top with chicken and cheese. Finally, generously drizzle with creamy Caesar dressing.

Garden Fresh Italian Pizza

Ingredients:

1. Ready bake pizza dough
2. 1 ½ cup marinara sauce, 3 tbsp pesto sauce
3. 1 pkg Italian blend or Mozzarella shredded cheese
4. 1 small can olives (drained)
5. 1 cup fresh spinach leaves (washed and pat dry)
6. ¼ orange bell pepper (thinly sliced)
7. 8 cherry tomatoes (quartered)
8. 1 pkg pepperoni
9. 1 pkg Italian dry salami

Instructions:

Again, preheat oven to 400 degrees, flour, and roll out pizza dough. Combine marinara sauce and pesto sauce. This will add tons of flavor to your base sauce. Spread sauce onto uncooked dough, and then cover thoroughly with cheese. Top with meat first, then veggies, and maybe a little more meat after that. Sprinkle another thin layer of cheese over the top. Bake at 400 degrees until cheese starts to melt and the crust turns a light golden brown.

*For even more flavor, brush the crust with garlic butter spread as soon as you remove your pizza from the oven. The crust will be melt in your mouth delicious.
