The 57th Annual GRAMMY Awards are being held on Sunday, Feb. 8 at STAPLES Center, but what some don’t know is that a lot of preparation goes into planning the food selections.

A lucky few of us had a chance to preview that evening’s exceptional menu while witnessing the pre-GRAMMY set construction on Wednesday, Feb. 4.

Executive Chef Joseph Martin and his team have been working tirelessly to create the perfect menu for the evening. No stranger to high profile events, Martin has been formulating GRAMMY Awards menus for the STAPLES Center for the past four years to endless praise and he clearly relishes his job.

“It seems like every time we do the GRAMMYs, everything is brand new again,” he says while speaking to a large group of reporters. “It never feels like we’ve done this before in the sense that it’s always energetic. It’s always something fun that we look forward to.”

Having such a successful history inspires Martin to outdo himself with each passing year.

“We try to stay ahead of the trends,” he says. “We try to do something unique or different from prior years. We always try to reinvent the wheel with a unique experience that we can give to the guests.”

Martin designs the menu to accommodate the sophisticated palettes of GRAMMY attendees while keeping the items easy to consume in black tie attire. The dishes are mostly appetizer sized items that can be enjoyed standing in an evening gown without fear of spilling something and destroying a designer ensemble.

One of the standout entrees is the Buttermilk Panna Cotta, a savory play on the traditionally sweet dessert. Topped with candied pumpkin and micro basil, the Panna Cotta is a delectable marriage of a modern and classical.

Also, jumbo prawns wrapped in Nueske’s award winning applewood smoked bacon are to be served on a bed of cheese grits with Worcestershire sauce that transport the taste buds to Bourbon Street in New Orleans.

The dessert selection ranges from gourmet cupcakes, cheesecakes, banana Financier and Vosges Chocolate Encyclopedia Box set created especially for this year’s GRAMMY Awards.

The 57th Annual GRAMMY Awards® will air live on Sunday, Feb. 8 on CBS.
