I love Italian food. Love. Especially spaghetti. I mean, I could eat spaghetti three times a week – every single week. The al dente noodles, flavorful meat mixture and savory sauce make for a delectable dinner party in my mouth.

Unfortunately, when it comes to spaghetti with meat sauce, my husband is not so enthusiastic. In fact, he recently told me he used to really like spaghetti – years ago – before I started making it all the freaking time. Talk about devastation station.

But his comment got me thinking. There are so many delicious Italian dishes. Why have I been limiting us to simple spaghetti? Why have I been keeping us in this little jar of marinara when there is an entire peninsula to explore? Antipastos, and pizzas and pestos, oh my!

So I started switching things up a bit. I challenged myself to try out a new Italian dish every week, to find a new favorite – or at least a close second. Maybe, even, to make my husband miss my spaghetti.

Challenge deliciously accepted. Shrimp Alfredo, Chicken Parmesan, Pomegranate Bruschetta were all mouthwatering. Pesto green beans with cherry tomatoes are topped with fresh parmesan cheese, can be served cold or hot and make the perfect side to countless dishes.

There there are dishes like Cheese Ravioli with Crab Meat Primavera Sauce. You guessed it, this is my new second favorite Italian dish. This pasta has all of my favorite things. Seafood, cream sauce, cheese and who doesn’t love ravioli? It’s like a perfect little pocket with a surprise inside. Toss in a few pink plump shrimp, and you won’t be able to resist.

When I made this last week, my husband even went in for seconds. Now that’s what I call success. Try out this super simple recipe and see for yourself!

Cheese Ravioli with Crab Meat Primavera Sauce

Ingredients:

1 pre-made package of cheese ravioli
8-10 shrimp, peeled and deveined
2 T tomato paste
1 jar Alfredo sauce
½ pound lump crab meat (can also substitute one can crab meat)
¼ cup green onions, finely sliced)
red pepper flakes to taste

Instructions:

Bring a medium pot of water to boil over high heat. Once the water has hit a rolling boil, add cheese ravioli and reduce heat to medium. Cook until tender and cheese filling is soft. Remove from heat, drain and set aside.

Add the shrimp and pepper flakes into the pot over medium heat until shrimp are pink and fully cooked through. Remember, a few pepper flakes go a very long way.

Next, add tomato paste to the shrimp and toss until they are well coated. Stir in Alfredo sauce and crab meat. Mix until all ingredients are well combined. Gently toss in ravioli, being careful not to break them. Finally, top with green onion slices and serve.
