Sunny days, longer nights and lazy mornings in bed. There is nothing wrong with a little rest and relaxation, and no better time enjoy a little R&R than the present. Since the sun stays planted high in the sky until much later, it’s perfectly acceptable to get a late start.
What better way to enjoy that extra hour or few in bed than with breakfast? I’m not talking a cold bowl of Cheerios. I’m talking about sweet, filling, fresh breakfast. The kind of breakfast comprised of a few of your favorite things.
Start with seasonal fruit. Mangoes, pineapple, or, my personal favorite, a fresh bowl of ripe cherries. Then, it’s time for the good stuff. A California Club Breakfast Burrito – scrambled eggs, shredded cheese, bacon and sliced avocado all wrapped up in a giant tortilla. Make it egg whites, turkey bacon and a whole wheat wrap if you’re taking a walk on the healthier side.
Not a burrito kind of guy? Trade it in for a tall stack of flapjacks. A few light and fluffy discs spread with melting butter and drenched in maple syrup will get anyone’s day off to a lovely start, indeed.
Or how about baked Belgian Waffles. Eggs and sausage on the side. Can you imagine anything better? I like to fill each little tiny square with warm blueberry syrup, top the waffle with fresh-cut strawberries and finish off with a generous dollop of whipped cream. See, I told you there was nothing better.
Doesn’t this sound like something you would want to enjoy more than just on Mother’s Day or for your next birthday? Any reason is a great reason for breakfast in bed. Congratulate yourself on a presentation well done at work yesterday. Have a day of beach bumming planned? You’ve got to eat a little something before you go. Better yet, use breakfast in bed to enjoy a bit more bedroom time with the one you love. Whether you’re the one cooking or the person being surprised, both of you will be sure to get your day off to the best start you’ve had in weeks.
So, don’t skip breakfast. Stay in bed and enjoy it. After all, breakfast is the most important meal of the day.
